Here is the recipe (serves 1 or 2, depending on how big is your appetite :-)): 50 g rolled oats, 1 tablespoon white chia seeds, 100 ml almond milk, 3 frozen bananas, 1 teaspoon blue spirulina and 1/2-1 teaspoon pitaya powder from rawnice, up to 50 ml almond milk, 150-200 g coconut yogurt

Instructions: Soak 50 gr rolled oats and 1 tablespoon chia seeds in 1 dl almond milk overnight. Put the soaked oats in the blender and add frozen bananas and a couple of tablespoons almond milk. Blend until smooth and creamy. *

First layer:  Take 1/3 of the base mixture and mix it with blue spirulina and pitaya to get the desired color. Mix well and pour it on the bottom of your jar. *

Second layer: Take another 1/3 of the base mixture and add blue spirulina and pitaya to get the lighter shade than in the first layer. Mix well and pour it on top of the first layer.

Third layer: Take the last 1/3 of the base mixture and add a little bit of blue spirulina and pitaya. Mix well and pour it over the second layer.

.  Oreo White Chocolate Slice
(Serves 6-12)  Base
70g / 2/3cup almond meal
40g / 1/3 cup coconut flour
10g / 1 Tbsp cacao powder
2 Tbsp coconut oil melted 
2 Tbsp rice malt syrup
Mix in a bowl and press into a lined tin or silicon molds •
White Choc Filling
100g cashews soaked in boiling water for 15mins and drained
25g cacao butter 
25ml maple syrup
1/2 tsp vanilla extract
1/4 tsp Himalayan salt
90ml almond or coconut milk
50g Oreos crushed 
Add all ingredients except Oreos to a blender and blend until smooth, adding more almond milk if required
Stir through Oreos 
Spoon over bases and smooth down  Chocolate
150g dark chocolate melted
Pour melted chocolate over filling
Place in the freezer overnight to set
Slice or remove from molds and enjoy!

3 cups chickpeas (cooked and rinsed)
1 small onion 
2 celery stalks
4 pickle spears + 1 tbsp pickle juice
1/4 cup vegan mayo (or mashed avocado) 
Salt and pepper to taste ~
Finely dice up onion, celery and pickles. Put all ingredients in a food processor and pulse several times until you reach desired consistency.

VEGAN PURPLE OMBRE PANCAKES
♡ 190 g all purpose flour
♡ 1+1/2 tbsp baking powder
♡ 3 tbsp erithritol (or other sweetener)
♡ 360 ml plantbased milk of choice
♡ 1+1/2 apple cider vinegar
♡ rawnice pink pitaya powder
♡ rawnice blue spirulina powder (➡️ use code ANDREEASBREAKFAST15 to get 15% off your order on their website)

In a small bowl mix together milk and vinegar. Let the milk sit for 5 minutes, it will become some sort of a vegan buttermilk. In a large bowl mix flour, baking powder and sweetener. Add in the liquid mixture and mix well. Heat up a non stick pan and start cooking your pancakes. Let the first 2 plain, then start adding pink pitaya and blue spirulina powder to the batter (I added 1/2 tsp pink pitaya powder and 1/4 tsp blue spirulina powder after each 2 pancakes to achieve the ombre effect).

We are a work in progress and by taking intentional steps towards our goal, we will get there someday. If I want to be more confident, I need to start thinking of me as a confident woman, constantly repeating myself "you are confident, you can do this, your opinion matters" and maybe one day these things will come to me naturally, as part of who I am 😊. I do however, have my own tip on how to work towards becoming a better self - I pray. Maybe I haven't mentioned this before, but I am a christian, I believe in God and in His power to help me change. So, every time I feel down, I just pray and ask Him to help me become more confident, for example. Things don't change in that instant, of course, but over time, He brings situations in my life that develop in me that exact quality I was asking for. GOLDEN SPICED OATS PARFAITS
♡ 60 g fine oat flakes
♡ 1 tbsp chia seeds
♡ 2 tbsp dessicated coconut
♡ 1+1/4 tsp turmeric powder
♡ ¼ tsp chai masala spice mix
♡ 180 ml plant-based milk
♡ 1-2 tbsp maple syrup
♡ 150 g coconut yogurt
♡ fresh blueberries

Add all the ingredients in a jar, stir well and let it sit in the fridge over night.Take the jar out of the fridge and stir again. At this point the oats can be warmed in the microwave if desired.Place the oats in a jar, top with coconut yogurt and fresh blueberries and serve.

COCONUT PITAYA OATMEAL
♡ 50 g fine oat flakes
♡ 2 tbsp dessicated coconut
♡ 1 tbsp chia seeds
♡ 2 tsp vanilla extract
♡ 1 tbsp rawnice pink pitaya powder
♡ 450 ml plant-based milk of choice (you can also do half milk, half water or just water)
♡ 1 heaping tbsp agave syrup

In a small pot add the oats, coconut, chia seeds, agave and milk. Place it on the stove, over medium-high heat and let it cook until it comes to a boil. Whisk every now and then so that the oats don't stick to the bottom of the pot. As soon as your oatmeal starts to boil, turn the heat on low and keep cooking it until it thickens (it should take about 5 minutes or so; keep stirring occasionally). After your oatmeal has reached the desired consistency, turn off the heat and add in the vanilla extract and the pink pitaya powder. Whisk vigorously so that the pink powder gets to be fully incorporated. Serve your oats immediately with your favourite toppings.

.  Here's the recipe for those who wanna give it a try! 
Cacao maca oats:
1/2 cup rolled oats
1 tbsp chia seeds
pinch of salt
pinch of vanilla (optional) 
1 tsp almond butter
1 tbsp maple syrup 
3/4 cup plant milk
1/2 cup water
1 tsp raw cacao powder
1/2 tsp maca powder
Add oats, chia seeds, salt, vanilla, almond butter, maple syrup, plant milk and water to a saucepan. Mix well and bring to a simmer. Cook over gentle heat until thickened. Remove from heat, mix in raw cacao and maca powder (we want to avoid cooking raw superfoods, that's why it's better to add them to already cooked oatmeal). Transfer to a bowl, top with your favorite topping and enjoy warm! .

.  Ingredients for 7-8 pancakes 
Dry 
240g spelt flour
1 tsp baking powder 
1/4 tsp sea salt  Wet
250 ml almond milk
1 tsp vanilla bean paste 
1 tbsp coconut oil, melted
4 tbsp agave syrup
100ml water 
In a medium bowl, combine spelt flour, baking powder and salt.
In a small bowl, combine the wet ingredients, except water. Stir to combine.
Pour the wet ingredients over the dry ingredients and whisk to combine. Don't over mix! Lumps are fine.
Set aside for 15 min.
After 15 minutes, add the water and gently combine.
Heat a small non stick pan (12cm) on medium heat. 
Pour about 2 tbsp of the batter and bake on each side for about 2 minutes or until golden brown.
Toppings: coconut yogurt, cranberries, rose buds and petals suncorefoods , red currant, maple syrup, baby meringues .

I blended some more to incorporate it and then I transferred the pink nicecream in the bowl next to the white one.

But you know what? The way YOU feel about your work means the most! It's nice to be appreciated, of course it is, but remember that beauty is subjective so, don't let others bring you down. BASE
* 1/2 cup (125ml) gluten free rolled oats
* 1/2 cup (125ml) quinoa puffs
* 1/3 cup (80ml) almonds, chopped
* 1/3 cup (80ml) hazelnuts, chopped
* 1/4 cup (60ml) pumpkin seeds, chopped
* 1/4 cup (60ml) flax meal
* 1 tbsp chia seeds
* 1/3 cup (80ml) maple syrup
* 1 tbsp coconut oil, melted
* Pinch of sea salt
Preheat oven to 180°C (350°F). Line a 20x20cm (8x8 inch) baking pan with parchment paper. Combine all dry ingredients in a large bowl. In a small bowl, whisk maple syrup and coconut oil. Pour liquid over dry ingredients and stir until completely coated. Transfer the mixture in the prepared pan and press down firmly. Bake for 25 minutes or until golden brown. Let it cool slightly before spreading the chocolate.
TOPPING
* 180g dark chocolate
* 1 tbsp coconut oil
* 1 tbsp goji berries
* 1 tbsp pistachios, chopped
* 1 tbsp pumpkin seeds
* 1 tbsp cocoa nibs
* Pinch of sea salt
Melt chocolate and coconut oil in a double boiler. Spread evenly over the base. Sprinkle all toppings. Refrigerate for 1 hour before cutting into bars. Enjoy for breakfast or snack 😋

Directions: ⁣
1. Preheat oven to 170⁰C. Place every dry ingredient for the crust in a food processor. Process well until it reaches the consistency of flour. ⁣
2. Add melted coconut oil into the food processor and process until it becomes like wet sand⁣
3. Put a baking sheet on the mold and press the mixture into the bottom. Bake it for about 15-22 min or until baked through. After it has cooled down, put it in the freezer for 30 minutes to an hour. ⁣
4. Put every ingredient for the strawberry filling in a high-speed blender and blend well. Layer it over the crust and place strawberries and blueberries on the top. Freeze it until set. ⁣
5. Take out the cake from the mold and cut with a warm knife. ⁣ .

◾️Day 2: Grab one portion plain rice and mix with diced tomatoes reheat in a pan or in microwave.

CHIA PUDDING
4 tbsp chia seeds
1/2 cups full-fat coconut milk
3/4 cup almond milk (or any plant-based milk)
 1/2 tsp pumpkin pie spice
1/4 tsp vanilla extract
1 tbsp maple syrup

PUMPKIN PIE MOUSSE LAYER
½ cup raw cashews, soaked in water overnight, then drained. 
1/2 cup+2 tbsp coconut milk (full-fat from a can)
5 tbsp pumpkin puree (not pumpkin pie filling)
2 tbsp maple syrup
2 tsp pumpkin pie spicevegan whip cream to top (optional)

INSTRUCTIONSMix the chia pudding ingredients together in a bowl until well combined, then place in the fridge to set while you prepare the pumpkin mousse. Add all the pumpkin mousse ingredients to a blender and blend until smooth. Scape down the sides of the blender as needed so all the little bits get blended up. Spoon the chia pudding evenly into little cups. Pour the pumpkin pie mousse mixture on top of the chia pudding.Place in the fridge and let set fo 2 hours.Top with vegan whip cream or any toppings you love!

Recipe
For the Sweet potato falafel:⠀
230g chickpeas, canned or cooked⠀
200g steamed or cooked sweet potato⠀
1 yellow onion, roughly chopped⠀
3 garlic cloves⠀
handful of fresh herbs of choice (parsley, coriander, or mix of both)⠀
2 tbsp of tahini⠀
1 tsp ground cumin⠀
1/2 tsp ground coriander⠀
1/2 tsp salt, or more to taste⠀
1 tbsp sesame seeds (optional)⠀

Preheat oven to 210C. Place all the ingredients (except sesame seeds) in a food processor and pulse blend until combined, but still chunky. With your hands (wet them slightly if the dough is sticking to your fingers), form about 16 balls, lightly press them on a baking tray lined with parchment paper and sprinkle sesame seeds on top (optional). Bake for 20 minutes or until golden brown and crispy on outside. Enjoy!

.  Ingredients
✨½ cup coconut oil, melted
✨½ cup + 2 tablespoons coconut sugar
✨1 teaspoon vanilla extract
✨1 cup flour
✨2 servings (50 grams) Two Islands Salted Caramel Protein
✨1 teaspoon baking powder
✨½ teaspoon salt
✨4-5 tablespoons of milk of choice (I use almond milk)
✨½ cup dark chocolate, cut into chunks  Method  1. Preheat the oven to 180°c, and line a baking tray with baking paper.
2. In a large bowl, add the coconut oil, coconut sugar and vanilla extract. Beat with a hand mixer until combined.
3. In another bowl, stir together the flour, protein powder, baking powder and salt.
4. Add the dry ingredients to the large bowl, then fold the mixture together until combined. Add tablespoon amounts of the milk to the bowl, one at a time, and stir into the mixture. You may not need to use all of the milk, just enough to form a soft dough.
5. Stir through the chocolate chunks.
6. Scoop the dough with an ice cream scoop (2 tablespoon amounts) onto the baking tray. Flatten slightly with a fork.
7. Bake in the oven for 10 mins. Let cool for 5-10 minutes and enjoy!

These pancakes are made with tigernut flour and rawnice 
pitaya and butterfly pea flower powder. I was finally able to find tigernut flour in the shops here, tried it for the very first time and I loved it. It has a slightly gritty texture and is mildly sweet, and is great for gluten-free baking. The only downside is that it's a bit pricey but it's definitely worth a try. 
To make: 
80 g white rice flour,
40 g brown rice flour,
50 g tigernut flour,
10 g tapioca flour,
15 g potato starch,
3 tablespoons agave,
150 ml rice milk,
1 ripe banana (approx. 100 g),
1.5 teaspoons baking powder,
1-2 teaspoons rawnice pitaya powder,
1/2 - 1 teaspoon rawnice butterfly pea flower powder.

Brush the pan with coconut oil and preheat it under medium-low heat. Pour the batter into a circle (I used 1 heaped tablespoon for each pancake). When the pancake starts bubbling a bit and the bottom is lightly browned, flip it over and cook briefly on the other side. Top with red currants.
