CHOCOLATE PEPPERMINT TRUFFLES
For the truffles:
♡ 250 g white chocolate
♡ 150 ml full fat coconut milk
♡ 2 drops peppermint essential oil or peppermint extract to taste

For the chocolate glaze:
♡ 250 g white chocolate
½ tbsp blue spirulina powder
.
How to make:
Place 250 g chopped white chocolate in a large bowl.Add the coconut milk in a small pan, place it on low heat and bring it to a boil.When it starts to bubble, turn off the heat and pour the coconut milk over the chopped chocolate.Let it sit for 2 minutes, then whisk to help the chocolate melt and for the ingredients to combine.Add in the peppermint extract and whisk again.Place the truffle base in the fridge to set for at least 2 hours. After the 2 hours have passed and the chocolate mixture is firm enough to be scooped, make half a tablespoon sized balls (this recipe makes around 25 of them).Place the formed balls on a tray lined with baking paper and put them in the fridge to set again for at least half an hour.

For the coating melt 250 g vegan white chocolate in the microwave (800W, 40 second intervals) or on bain-marie. Add in the blue spirulina powder and whisk well.Coat every chocolate truffle with the blue chocolate glaze with the help of a fork, let the excess chocolate drip and put the truffles back on the tray.* Place the tray in the fridge until the coating sets (about 20 to 30 minutes).

*Optional: You can add winter themed sugar decorations on top of each truffle right after they were dipped into the glaze.

Turned out that Elena's moodiness and fussiness from last week were just because she was coming down with a cold 😔. VEGAN BANANA PANCAKES
♡ 250 g all purpose flour
♡ 10 g baking powder
♡ 2 large ripe bananas, mashed
♡ 320 ml plantbased milk of choice
♡ 1 tbsp vanilla extract
♡ 4 tbsp maple syrup
♡ a pinch of salt
♡ 1/4 cup chocolate chips
♡ 50 g pecans, chopped

In a large bowl mix flour, salt and baking powder. In a smaller one mix the mashed banana, milk, vanilla and maple syrup. Pour the wet mixture over the dry ingredients and whisk. Fold in the chocolate chips and pecans. Heat up a nonstick pan and start cooking your pancakes for about 1 minute per side.

✨½ cup coconut oil, melted
✨½ cup + 2 tablespoons coconut sugar
✨1 teaspoon vanilla extract
✨1 cup flour
✨2 servings (50 grams) Two Islands Salted Caramel Protein
✨1 teaspoon baking powder
✨½ teaspoon salt
✨4-5 tablespoons of milk of choice (I use almond milk)
✨½ cup dark chocolate, cut into chunks  Method  1. Preheat the oven to 180°c, and line a baking tray with baking paper.
2. In a large bowl, add the coconut oil, coconut sugar and vanilla extract. Beat with a hand mixer until combined.
3. In another bowl, stir together the flour, protein powder, baking powder and salt.
4. Add the dry ingredients to the large bowl, then fold the mixture together until combined. Add tablespoon amounts of the milk to the bowl, one at a time, and stir into the mixture. You may not need to use all of the milk, just enough to form a soft dough.
5. Stir through the chocolate chunks.
6. Scoop the dough with an ice cream scoop (2 tablespoon amounts) onto the baking tray. Flatten slightly with a fork.
7. Bake in the oven for 10 mins. Let cool for 5-10 minutes and enjoy!

.  Ingredients for 7-8 pancakes 
Dry 
240g spelt flour
1 tsp baking powder 
1/4 tsp sea salt  Wet
250 ml almond milk
1 tsp vanilla bean paste 
1 tbsp coconut oil, melted
4 tbsp agave syrup
100ml water 
In a medium bowl, combine spelt flour, baking powder and salt.
In a small bowl, combine the wet ingredients, except water. Stir to combine.
Pour the wet ingredients over the dry ingredients and whisk to combine. Don't over mix! Lumps are fine.
Set aside for 15 min.
After 15 minutes, add the water and gently combine.
Heat a small non stick pan (12cm) on medium heat. 
Pour about 2 tbsp of the batter and bake on each side for about 2 minutes or until golden brown.
Toppings: coconut yogurt, cranberries, rose buds and petals suncorefoods , red currant, maple syrup, baby meringues .

10-15 small to medium sized strawberries, cut in half ⁣

Directions: ⁣
1. Preheat oven to 170⁰C. Place every dry ingredient for the crust in a food processor. Process well until it reaches the consistency of flour. ⁣
2. Add melted coconut oil into the food processor and process until it becomes like wet sand⁣
3. Put a baking sheet on the mold and press the mixture into the bottom. Bake it for about 15-22 min or until baked through. After it has cooled down, put it in the freezer for 30 minutes to an hour. ⁣
4. Put every ingredient for the strawberry filling in a high-speed blender and blend well. Layer it over the crust and place strawberries and blueberries on the top. Freeze it until set. ⁣
5. Take out the cake from the mold and cut with a warm knife. ⁣ .

.  5 roma tomatoes
2 red or orange bell peppers
3 large garlic cloves
1/2 cup fresh basil
1/2 tsp dried oregano
1 tbsp avocado oil
1/2 tsp dried rosemary
1 tsp salt
1.5 cups cooked rigatoni
Cut tomatoes in half. Remove stem and seeds from bell peppers. On a nonstick or foil-covered baking sheet, place the tomatoes, bell peppers and garlic. Cover with avocado oil, salt and crushed rosemary.
Roast for 20 minutes at 400F. Remove from oven and let cool for 5 minutes or until not hot to touch. Remove skins, then blend in a blender with oregano and fresh basil.
If sauce is too thin, cook in a sauce pan over medium heat for 5 minutes, stirring occasionally - this will allow some of the liquid to evaporate and thicken the sauce 🍝 Serve with your favorite al dente pasta!

Sweet basil seeds with blue spirulina and blueberry mousse: For 3 servings: 400 ml of almond milk, 4 tablespoons of Vegan yoghurt, 3 teaspoons of powdered sugar - mix it, add 60 g of sweet basil seeds (you will get them at planteon.pl), put it away for half an hour. During this time, boil 150 g blueberries with 50 ml of water, mixed and rubbed through a small sieve. Prepared spirulina: 1.5 teaspoon mixed with 2 teaspoons of water and 2 teaspoons of lemon juice. On the bottom of the glasses I added a tablespoon of vegan yogurt, add a few drops of spirulina to the next layer and half the height of the glasses. 60g oats
10g cacao powder
2 tbsp plant-based protein powder (optional)
1 tbsp chia seeds
200ml plant-based milk
2 tbsp maple syrup
1 tbsp peanut butter
1 tsp cinnamon
a pinch of fine sea salt
✍️
In a pan, heat all the ingredient for the porridge for about 5 minutes.
Serve in a bowl an add fruits or seeds as you like.

(Serves 6-12)  Base
70g / 2/3cup almond meal
40g / 1/3 cup coconut flour
10g / 1 Tbsp cacao powder
2 Tbsp coconut oil melted 
2 Tbsp rice malt syrup
Mix in a bowl and press into a lined tin or silicon molds •
White Choc Filling
100g cashews soaked in boiling water for 15mins and drained
25g cacao butter 
25ml maple syrup
1/2 tsp vanilla extract
1/4 tsp Himalayan salt
90ml almond or coconut milk
50g Oreos crushed 
Add all ingredients except Oreos to a blender and blend until smooth, adding more almond milk if required
Stir through Oreos 
Spoon over bases and smooth down  Chocolate
150g dark chocolate melted
Pour melted chocolate over filling
Place in the freezer overnight to set
Slice or remove from molds and enjoy!

BASE
* 1/2 cup (125ml) gluten free rolled oats
* 1/2 cup (125ml) quinoa puffs
* 1/3 cup (80ml) almonds, chopped
* 1/3 cup (80ml) hazelnuts, chopped
* 1/4 cup (60ml) pumpkin seeds, chopped
* 1/4 cup (60ml) flax meal
* 1 tbsp chia seeds
* 1/3 cup (80ml) maple syrup
* 1 tbsp coconut oil, melted
* Pinch of sea salt
Preheat oven to 180°C (350°F). Line a 20x20cm (8x8 inch) baking pan with parchment paper. Combine all dry ingredients in a large bowl. In a small bowl, whisk maple syrup and coconut oil. Pour liquid over dry ingredients and stir until completely coated. Transfer the mixture in the prepared pan and press down firmly. Bake for 25 minutes or until golden brown. Let it cool slightly before spreading the chocolate.
TOPPING
* 180g dark chocolate
* 1 tbsp coconut oil

VEGAN PURPLE OMBRE PANCAKES
♡ 190 g all purpose flour
♡ 1+1/2 tbsp baking powder
♡ 3 tbsp erithritol (or other sweetener)
♡ 360 ml plantbased milk of choice
♡ 1+1/2 tbsp apple cider vinegar
♡ rawnice pink pitaya powder

In a small bowl mix together milk and vinegar. Let the milk sit for 5 minutes, it will become some sort of a vegan buttermilk. In a large bowl mix flour, baking powder and sweetener. Add in the liquid mixture and mix well. Heat up a non stick pan and start cooking your pancakes. Let the first 2 plain, then start adding pink pitaya and blue spirulina powder to the batter (I added 1/2 tsp pink pitaya powder and 1/4 tsp blue spirulina powder after each 2 pancakes to achieve the ombre effect).

I blended some more to incorporate it and then I transferred the pink nicecream in the bowl next to the white one.

VEGAN PURPLE OMBRE ORANGE PANCAKES
♡ 225 g all purpose flour
♡ 50 g raw cane sugar
♡ 10 g baking powder
♡ a pinch of pink Himalayan salt
♡ 300 ml plant-based milk
♡ 60 ml freshly squeezed orange juice
♡ zest from a large orange
♡ pink pitaya powder

In a large bowl add flour, baking powder, salt, sugar and orange zest. Whisk a little bit to mix them. Add in milk and orange juice and whisk some more to incorporate all the ingredients. Heat up a non-stick pan and start cooking your pancakes, 2 at a time, for about 1 minute per side. Let the first 2 pancakes plain, then start adding pitaya powder and blue spirulina powder a little bit at a time after each 2 pancakes in order to create the ombre effect.

If it's true what they say and beauty really lies in the eyes of the beholder, not everyone will find this bowl as beautiful as I do, but what matters to me right now is that I LOVE IT! Maybe sometimes you are hesitant about sharing a photo that you love, because you are not sure how people will react to it, how many likes it will get and things like that. And maybe you let fear win and you decide to delete it or simply keep it in a forgotten folder on your phone, or you end by posting it, but it doesn't get the attention you've been hoping for and you get disappointed or worse, you delete it. But you know what? The way YOU feel about your work means the most! It's nice to be appreciated, of course it is, but remember that beauty is subjective so, don't let others bring you down. We are a work in progress and by taking intentional steps towards our goal, we will get there someday. If I want to be more confident, I need to start thinking of me as a confident woman, constantly repeating myself "you are confident, you can do this, your opinion matters" and maybe one day these things will come to me naturally, as part of who I am 😊. I do however, have my own tip on how to work towards becoming a better self - I pray. Maybe I haven't mentioned this before, but I am a christian, I believe in God and in His power to help me change. So, every time I feel down, I just pray and ask Him to help me become more confident, for example. Things don't change in that instant, of course, but over time, He brings situations in my life that develop in me that exact quality I was asking for. GOLDEN SPICED OATS PARFAITS
♡ 60 g fine oat flakes
♡ 1 tbsp chia seeds
♡ 2 tbsp dessicated coconut
♡ 1+1/4 tsp turmeric powder
♡ ¼ tsp chai masala spice mix
♡ 180 ml plant-based milk
♡ 1-2 tbsp maple syrup
♡ 150 g coconut yogurt
♡ fresh blueberries

Add all the ingredients in a jar, stir well and let it sit in the fridge over night.Take the jar out of the fridge and stir again. At this point the oats can be warmed in the microwave if desired.Place the oats in a jar, top with coconut yogurt and fresh blueberries and serve.

COCONUT PITAYA OATMEAL
♡ 50 g fine oat flakes
♡ 2 tbsp dessicated coconut
♡ 1 tbsp chia seeds
♡ 2 tsp vanilla extract
♡ 1 tbsp rawnice pink pitaya powder
♡ 450 ml plant-based milk of choice (you can also do half milk, half water or just water)
♡ 1 heaping tbsp agave syrup
.
In a small pot add the oats, coconut, chia seeds, agave and milk. Place it on the stove, over medium-high heat and let it cook until it comes to a boil. Whisk every now and then so that the oats don't stick to the bottom of the pot. As soon as your oatmeal starts to boil, turn the heat on low and keep cooking it until it thickens (it should take about 5 minutes or so; keep stirring occasionally). After your oatmeal has reached the desired consistency, turn off the heat and add in the vanilla extract and the pink pitaya powder. Whisk vigorously so that the pink powder gets to be fully incorporated. Serve your oats immediately with your favourite toppings.

1/2 cup frozen blueberries
1/2 cup desiccated coconut
1/4 cup gluten-free rolled oats
2 pitted medijool dates (12g)
1 tbsp cashew butter 
1 tbsp organic açai Berry powder suncorefoods .
Add all ingredients to a food processor and pulse until the mixture is well combined. 
Place mixture in the freeze for 10 minutes. Then scoop out 1-2 tbsp of the mixture and roll mixture into bite sized balls. Roll balls into more coconut if desired. 
Store bliss balls in an air tight container and store in the fridge for up to 5 days. Enjoy! .

🌱Filling ingredients:⁣
~ 1/2 - 3/4 lb Chinese chive - cleaned, drained & finely chopped⁣
~ 8oz firm tofu - mashed, pan fried & seasoned with salt & white pepper⁣
~ 1 bundle mung bean thread - softened in hot water & cut into fine shred⁣
~ 1 tablespoon toasted sesame oil⁣
~ 1 1/2 teaspoons salt (adjust to your preference)⁣
~ 1 teaspoon organic sugar⁣
~ a few shakes of white pepper⁣
⁣
🌱Dough ingredients:⁣
~ 2 3/4 cups all purpose flour⁣
~ 1/2 cup hot boiling water⁣
~ 1/4 cup cold water⁣
~ pinch of salt⁣
⁣
✅To make the dough, place flour & salt in a mixing bowl, then gradually pour in boiling water into the dry ingredients while stirring continuously using a spatula/chopsticks. ✅Continue adding cold water & knead into a soft dough, then let rest for 30 mins, covered.⁣
✅Meanwhile, place chopped chive, mung bean thread & mashed tofu in a bowl. Season accordingly with toasted sesame oil, salt, sugar & white pepper (adjust taste accordingly).⁣
✅To make the pockets, dust countertop with flour & divide dough into 9 pieces. Flatten each one with your palm & roll it into a circular disk by keeping the middle slightly thicker than the side. Fill each dough with fillings & pleat to seal by pinching the side.⁣
✅In a heated non-stick/cast iron pan with a drizzle of oil, toast pockets until golden brown on all side over low-med heat (covered). Serve warm with sambal oelek.⁣

.  Ingredients 
400g dairy free white chocolate, melted 
320g condensed coconut milk naturescharm 
1/2 cup dried cranberries 
Pinch of red beet powder for the colour, optional* .
Line a small pan with parchment paper that covers the sides of the pan. Melted chocolate in a double boiler, whisk in condensed coconut milk and beet powder stir until mixture is completely smooth.

Stir in dried cranberries, then quickly transfer the mixture to the lined pan and spread evenly.

Place pan in the freezer to set, about 2-4 hours. Cut the fudge into squares. Store fudge in an air tight container and store in the fridge for up to 1 week. .

For the Crust:
175g almond flour
3 pitted Medjool dates
3 Tbsp coconut oil
1 Tbsp lemon juice
1/2 tsp salt

method: 
Preheat oven to 170 Celsius degrees. 
Place the almond flour, dates, coconut oil, lemon juice, and salt into a food processor.  Pulse several times until the mixture resembles wet sand.  It will be a bit sticky. Press the crust mixture firmly into a lightly greased tart pan. Poke some holes into the bottom of the crust with a fork. Bake for 8-10 minutes until fragrant.  Remove and cool completely.

For the Lemon custard:
350g full fat coconut cream
150g maple syrup or agave 
35g coconut oil, liquefied 
Zest of 2 large lemons 
1 tsp vanilla bean paste 
Juice of 2 large lemons
1 tsp agar agar powder 
1/2 tsp turmeric powder (optional, for the color)

Method: 
1. Place all the ingredients in a small saucepan, then add agar agar. Heat on medium heat and bring to a brief boil. Reduce heat and simmer for a couple of minutes or until it starts to thicken.
2. Remove from heat and pour into the prepared crust. Let it cool down to room temperature, then place in the refrigerator to set for at least 2 hours.

.  Here's the recipe for those who wanna give it a try! 
Cacao maca oats:
1/2 cup rolled oats
1 tbsp chia seeds
pinch of salt
pinch of vanilla (optional) 
1 tsp almond butter
1 tbsp maple syrup 
3/4 cup plant milk
1/2 cup water
1 tsp raw cacao powder
1/2 tsp maca powder
Add oats, chia seeds, salt, vanilla, almond butter, maple syrup, plant milk and water to a saucepan. Mix well and bring to a simmer. Cook over gentle heat until thickened. Remove from heat, mix in raw cacao and maca powder (we want to avoid cooking raw superfoods, that's why it's better to add them to already cooked oatmeal). Transfer to a bowl, top with your favorite topping and enjoy warm! .
