These pancakes are made with tigernut flour and rawnice 
pitaya and butterfly pea flower powder. I was finally able to find tigernut flour in the shops here, tried it for the very first time and I loved it. It has a slightly gritty texture and is mildly sweet, and is great for gluten-free baking. The only downside is that it's a bit pricey but it's definitely worth a try. 
To make: 
80 g white rice flour,
40 g brown rice flour,
50 g tigernut flour,
10 g tapioca flour,
15 g potato starch,
3 tablespoons agave,
150 ml rice milk,
1 ripe banana (approx. 100 g),
1.5 teaspoons baking powder,
1-2 teaspoons rawnice pitaya powder,
1/2 - 1 teaspoon rawnice butterfly pea flower powder.

Brush the pan with coconut oil and preheat it under medium-low heat. Pour the batter into a circle (I used 1 heaped tablespoon for each pancake). When the pancake starts bubbling a bit and the bottom is lightly browned, flip it over and cook briefly on the other side. Top with red currants.

VEGAN ACTIVATED CHARCOAL PANCAKES
♡ 200 g all purpose flour
♡ a pinch of salt
♡ 3-4 tbsp erithritol (or other sweetener)
♡ 1+1/2 tbsp baking  powder
♡ 2 tbsp rawnice activated charcoal powder
♡ 340 ml milk of choice
♡ 1+1/2 tbsp apple cider vinegar
♡ 1 tsp vanilla extract

In a large bowl mix flour, salt, sweetener, baking powder and activated charcoal powder. In a small bowl mix milk and vinegar. Pour liquids over dry, mix well and let the batter sit for a couple of minutes. Heat up a non stick pan and start cooking your pancakes, about 1 minute per side.

For the orange layer:⁠
150g fresh chopped papaya*⁠
40g melted coconut cream⁠
10-15g xylitol⁠
1/4tsp Rawnice Pink Pitaya Powder⁠

For the yellow layer:⁠
150g fresh chopped mango⁠
40g melted coconut cream⁠
10-15g xylitol⁠
1/4tsp Rawnice Dunaliella Salina Powder⁠
For the turquoise layer:⁠

150g fresh chopped pineapple⁠
40g melted coconut cream⁠
10-15g xylitol⁠
1/4tsp Rawnice Blue Spirulina Powder⁠
*if you don’t like papaya, you can simply replace it with mango.⁠

Place all xylitol into mixing bowl and grind.⁠
Divide the Xylitol into 3 equal shares.⁠
🧡 Orange layer: Place one part of xylitol into a mixing bowl, add papaya and blend until smooth. Add cream, Pink Pitaya Powder and blend about 40 seconds.⁠
💛💙 Yellow and Turquoise layers: Repeat the orange process with two more layers for yellow and turquoise, but switch up the papaya for mango and pineapple in each batch.⁠
Time to make the popsicles: Pour each batch of colored liquid into a Popsicle Mold, one layer at a time. Insert popsicle sticks. Freeze for at least 4 hours.⁠

♡ 1/2 cup fine semolina ♡ 1 cup water ♡ 1 cup plant milk ♡ juice squeezed out of 1/2 lemon ♡ 1 tsp vanilla bean paste ♡ 3 tbsp maple syrup or sweetener of choice ♡ 1 tsp Blue Spirulina rawnice powder for the blue part ♡ 1 tsp Pink Pitaya rawnice powder for the pink part ♡ Method: Cook semolina with water and milk ideally in a non stick pan on medium heat constantly whisking to avoid lumps. Take off heat and add vanilla, lemon juice and sweetener. Divine into 3 parts adding blue and pink superfoods to two parts and leaving last one plain. Layer as desired and top with favourite toppings. Mine included coconut chips, sliced banana and red currants 💖💕💙⁠

FLUFFY VEGAN PANCAKES
♡ 250 g all purpose flour
♡ pinch of salt
♡ 1 tbsp rawnice blue spirulina powder
♡ 1 tbsp rawnice pink pitaya powder (➡️ use code ANDREEASBREAKFAST15 to get 15% off your order on their website)
♡ 10 g baking powder
♡ 3 tbsp sweetener of choice (I used erithritol)
♡ 150 g coconut yogurt
♡ 200-250 ml milk of choice
♡ 1 tsp vanilla extract

In a large bowl mix flour, salt, blue spirulina, pink pitaya, baking powder and sweetener (if using liquid sweetener like maple, agave, honey etc., mix it with the wet ingredients first). In a small bowl mix yogurt, milk (start with 200 ml) and vanilla (add now the liquid sweetener too). Pour wet over dry and mix well. If the batter is too thick, add the remaining 50 ml of milk. Heat up a non stick pan and start cooking your pancakes about 1 minute per side.

3 slices of bread⁠
125 g vegan cream cheese⁠
Pink pitaya powder⁠
Blue spirulina powder⁠
3 tbsp maple syrup⁠
-⁠
Divide cream cheese between 3 small bowls. To each bowl add 1 tbsp of maple syrup.⁠
To one of the bowls, add some pink pitaya powder. To the second one add blue spirulina powder and to the third one add both pitaya and spirulina.⁠
Add as much powder as you want in order to achieve the desired colors. Add more if you want the colors to be more vibrant or less if you want them more pale. Mix well.⁠
At the bottom of each slice of bread add 3 dollops of cream cheese (one of every color).⁠
Using a spatula spread the cream cheese on the slice of bread in order to create some multi color swirls.⁠

We wanted to skip our routine a little bit so, we spent most of the time outside and today we even went to visit our families 😊. It was unplanned, but it turned out to be the perfect Sunday ❤! Afterwards we went to a nice park and we enjoyed a little bit of sunshine before heading back home, just in time for dinner 😊😉. Elena slept only 20 minutes during the day, but she was such a sweetheart, you couldn't even tell she was so tired. After bath time she fell asleep in less than 2 minutes 🙈 so, that means Netflix time for hubby and I 😁.

Our day started with this VEGAN PURPLE OMBRE PANCAKES stack and we served it with chocolate, blueberries and maple syrup 🤤. Did you had pancakes today? 🙈

VEGAN PURPLE OMBRE PANCAKES
♡ 190 g all purpose flour
♡ 1+1/2 tbsp baking powder
♡ 3 tbsp erithritol (or other sweetener)
♡ 360 ml plantbased milk of choice
♡ 1+1/2 apple cider vinegar
♡ rawnice pink pitaya powder
♡ rawnice blue spirulina powder (➡️ use code ANDREEASBREAKFAST15 to get 15% off your order on their website)

In a small bowl mix together milk and vinegar. Let the milk sit for 5 minutes, it will become some sort of a vegan buttermilk. In a large bowl mix flour, baking powder and sweetener. Add in the liquid mixture and mix well. Heat up a non stick pan and start cooking your pancakes. Let the first 2 plain, then start adding pink pitaya and blue spirulina powder to the batter (I added 1/2 tsp pink pitaya powder and 1/4 tsp blue spirulina powder after each 2 pancakes to achieve the ombre effect).

.  Recipe (8” pie pan) by nm_meiyee
1 1/2 cups gluten free rolled oats 
1 1/4 cups almonds 
2 tbsp shredded coconut
2 tbsp flaxseed meal 
1/4 cup coconut oil 
1/4 cup pure maple syrup 
1/2 tsp vanilla bean extract .
Filling 
1 1/4 cups freshly squeezed lime juice 
1/4 cup freshly squeezed lemon juice 
2 cups full fat coconut milk, chilled overnight 
2 tbsp cornstarch 
2 tsp agar-agar 
1/2 cup pure maple syrup 
1/2 tsp matcha powder (optional) .
Preheat over to 180C. Grease a 8” pie pan with coconut oil. Set aside. 
In a food processor, add rolled oats, almond and shredded coconut. Process until finely ground. Add the maple syrup, vanilla and coconut oil until combined. Firmly press the mixture into the bottom and sides of the pan. Bake for 20 minutes or until it turns golden brown. Let cool completely. .
In a saucepan, combine the lime juice, lemon juice, coconut milk and cornstarch. Cook on a medium-high heat for 2 minutes, with constant stirring. Add agar-agar, matcha powder if using and mix until agar completely dissolved. Then add in maple syrup, whisking constantly. Allow to boil for approximately 30 seconds. .
Remove from heat and strain it through a fine mesh sieve into a heatproof bowl. Allow mixture to cool for 5 minutes. .
Pour lime mixture to a cooled tart shell and place in the fridge for at least 6 hours to set. .

♡ 100 g all purpose flour⁠

Cook your pancakes on a nonstick pan for about 1 minute per side (low heat works best to keep the blue vibrant).⁠

Ingredients  For the crust  1/2 cup desiccated coconut
1/4 cup cacao
2 Tbsp coconut sugar
1 Tbsp (preferably activated) buckwheat grouts
1 Tbsp rice malt syrup
30 grams cacao butter, grated  For the cupcake 
2.5 cup raw, unsalted cashews or macadamias, soaked for 4 hours in water
1/2 cup rice malt syrup
1/2 cup coconut milk
1 tsp vanilla (of choice- i used powder)
1/4 cup coconut oil
60g cacao butter, grated
10-20 drops pure peppermint essential oil
Blue spirulina
Green spirulina .

Method  Make the crust  1. Set aside a silicone, 6 piece muffin tray.
2. Add grated cacao butter to a heat proof bowl, and set over a pot of simmering water. Allow to melt, then remove from heat and let cool for 5 minutes.
3. Meanwhile, add remaining ingredients to a large mixing bowl. Mix well, then add the cacao butter. Mix again, spoon approx. 1.5 Tbsp into each silicone mould and press done to form a nice even base (and just eat any remaining base mixture- yum!). Make the filling  1. Add grated cacao butter and coconut oil to a heat proof bowl, and set over a pot of simmering water. Allow to melt, then remove from heat and let cool for 5 minutes.
2. Meanwhile, add cashews, coconut milk, rice malt syrup, and vanilla to a high-speed blender and blitz on high until smooth (around 1 minutes).

Ingredients 
2 tbsp flaxseed meal
1/4 cup water 
1 1/4 cups gluten free all purpose flour 
1/2 cup cocoa powder 
1 cup coconut sugar or brown sugar 
2 tsp baking powder 
Pinch of salt 
120g non-dairy dark chocolate, melted 
1/2 cup coconut oil
2g Instant coffee 
1 1/2 cups unsweetened soy milk 
2 tsp vanilla bean extract .
Topping, 
1 cup non-dairy chocolate, melted 
Fresh figs .
Preheat oven to 180 celsius. Line an 8" square baking pan with parchment paper. 
Combine flaxseed meal and water. Let rest for few minutes until thicken. 
In a large mixing bowl, combine flour, cocoa powder, baking powder and salt. 
Whisk together melted chocolate, coconut oil, and instant coffee powder. Pour chocolate mixture to dry mixture. Then add the flaxseed mixture, vanilla, Pour mixture into a prepared pan. Tap gently against the counter to release any air bubbles. 
Bake at preheated oven 180c for 30-35 minutes. 
until the toothpick comes out clean. Allow brownies to cool completely in the pan. Use the parchment paper to lift the brownies out of the pan. Spread melted chocolate over brownies. Transfer brownies to the fridge to set. Cut brownie into bars, top with fresh figs and serve. .

2 cups rolled oats 
1 cup almonds, skin on
2 tbsp flax seeds, grounded 
2 tsp cinnamon powder
2 tsp ginger powder 
Pinch salt 
1 tbsp coconut oil
1 tbsp almond butter 
1 tbsp maple syrup 
16 dates, pitted  Place the almonds and oats in a food processor and blend until finely ground. Add the rest of the ingredients and blend until you get a sticky dough. 
Press the dough firmly into the tart tin.
Place the tart in the fridge whilst making the filling. ~filling 
1 3/4 cup almond milk 
1/2 cup full fat coconut milk 
1-2 slices fresh ginger | 1/2 tsp ginger powder 
1-2 cinnamon sticks | 1 tsp cinnamon powder
2-3 whole green cardamom pods | 1 tsp cardamom powder 
3 anise stars | 1/2 tsp anise powder 
1/4 cup maple syrup
1 1/2 tsp loose black tea leaves (use one regular tea bag if you don’t have loose leaves)
1 1/2 tbsp corn starch

You’ll need  2 cups raw cashews, soaked 4 hours
1/2 cup best-quality cacao powder
1 tsp pure vanilla extract 
1 1/3 cups coconut milk
1-3 Tbsp pure maple syrup
Pinch salt
Totally optional extras- 2 tsp adaptogens (like your fav medicinal mushrooms), maca or cacao nibs

Method.
.
1. Drain cashews, rinse well. Set in a high-speed blender with remaining ingredients (start with less maple, if desired) and blend until silky smooth. Taste, and add extra maple, to suit your preference.  Divide between silicone magnum moulds (this made 5, for me), then insert popsicle sticks. Freeze for 3 + hours.  To make chocolate coating  200 grams preferred chocolate (I used vegan white, you could use anything)
1 tsp coconut oil
Optional- 20g loving earth caramel chocolate .

BLUE SPIRULINA PANCAKES
♡ 100 g all purpose flour
♡ 100 g oat flour
♡ 4 tbsp maple syrup
♡ 1 tbsp baking powder
♡ 1/4 tsp baking soda
♡ a pinch of salt
♡ 1 tbsp blue spirulina powder
♡ 300 ml milk of choice
♡ 1+1/2 tbsp apple cider vinegar
♡ 1 tbsp vanilla extract
.
Mix milk with apple cider vinegar and let the mixture sit for 5 minutes. In a large bowl whisk flours, baking soda, baking powder, spirulina powder and salt. Add in the milk-vinegar mixture, maple syrup and vanilla. Whisk to incorporate all the ingredients. Cook your pancakes on a nonstick pan for about 1 minute per side (low heat works best to keep the blue vibrant).

Ingredients 
Crust 
2 cups regular flour 
1 1/3 cup almond meal 
200g cold vegan butter 
2-3 tbsp maple syrup 
2-3 tbsp cold almond milk 
pinch of salt
.
Filling 
1 cup blackberries 
1 1/2 cups pitted cherries
2 canned full fat coconut milk 
3/4 cup water 
1/3 cup maple syrup 
2 tbsp açai powder (dissolve in 2 tbsp water) 
2 tsp agar agar powder .
Preheat oven to 180 celsius. Grease a tart pan. Set aside. 
In a food processor, combine crust ingredients 
and pulse to combined. (If it doesn’t come together, add 1/2 to 1 tablespoon of milk and process again) Firmly press into bottom and up the sides of tart tin. Bake for 20-25 mins until crust is golden brown. Transfer to a wire rack and let it cool while you're preparing the filling.

Add the cherries, blackberries and water into a saucepan over a medium heat. Mash the berries as they begin to heat up. Transfer mixture into a blender and blend until smooth. Strain it through a fine mesh sieve. 
Add coconut milk into a saucepan and place on the stove on low heat. When the mixture becomes warm add the agar-agar, stirring constantly, cook until agar completely dissolve. Then whisk in berry mixture, dissolved açai mixture and maple syrup. Allow to boil for approximately 30 seconds. Strain mixture through a mesh sieve and allow mixture to cool to room temperature. Gently pour into the cooled tart. Place tart in the fridge for at least 2 hours to set. Remove tart from the tart tin and garnish with berries. .

🔥🔥Recipe:
INGREDIENTS
• 5 dl coconut milk (500ml)
• 2 dl water (200ml)
• 70 g unrefined sugar
• a pinch of salt
• 45 g cacao powder
• 120 g dark chocolate
• 1 tsp agar agar
METHOD
1. Place milk, water, sugar and salt in a saucepan and heat over medium heat.
2. In a bowl, whisk cacao powder with 4 tbsp of water until lumps free then pour into the milk mixture and stir.
3. Add in the chocolate and stir until dissolved.
4. Place agar agar in a glas, add in 1 tbsp of water, stir and pour into the chocolate mixture.
5. Bring the mixture to a boil and boil for 1-2 minutes.
6. Pour the mixture into a mold, let it cool completely and let it rest in the fridge for 3-4 hours.
7. ENJOY ❤️

🍚Let’s start with spicing up your rice!
◾️Day 1: This is the day you prep your meals for the whole week or for 3-4 days. Cook 1 cup plain rice (with chicken/vegetable broth instead of water!). Eat plain rice on day 1.
◾️Day 2: Grab one portion plain rice and mix with diced tomatoes reheat in a pan or in microwave.
◾️Day 3: Grab one portion plain rice and mix with chickpeas.
◾️Day 4: Grab the last portion and mix with veggies.

💡TIP: Reheating rice in microwave and placing damp paper towel on top will make the rice moist!

🍜 To make these noodles you will need some rice noodles and some rawnice powders 😊. First, cook the noodles according to the package instructions (about 200 g). Rinse and drain them. Prepare 4 medium bowls. To the first one add 1 tbsp rawnice pink pitaya powder and some warm water (to fill 3/4 of the bowl) and mix well to dissolve it. To the second bowl add 1 tbsp rawnice blue spirulina powder and warm water (to fill 3/4 of the bowl) and mix to dissolve it. To the 3rd bowl add 1/2 tbsp rawnice blue spirulina powder and 1/2 tbsp pink pitaya powder and warm water (again, to fill 3/4 of the bowl). Mix well. To the 4th bowl add 1 tbsp rawnice Dunaliella salina powder and warm water and mix. Divide noodles into 4 equal portions. Add one portion of noodles to each bowl with colourful water and let them soak for about 1 minute. Take the noodles out using a kitchen tong and they are ready to plate and serve 😊.
