VEGAN PURPLE OMBRE ORANGE PANCAKES
♡ 225 g all purpose flour
♡ 50 g raw cane sugar
♡ 10 g baking powder
♡ a pinch of pink Himalayan salt
♡ 300 ml plant-based milk
♡ 60 ml freshly squeezed orange juice
♡ zest from a large orange
♡ pink pitaya powder
♡ blue spirulina powder (➡️ mine are from rawnice and with the code ANDREEASBREAKFAST15 you can get them with a 15% discount, just add the code at checkout on their website)

In a large bowl add flour, baking powder, salt, sugar and orange zest. Whisk a little bit to mix them. Add in milk and orange juice and whisk some more to incorporate all the ingredients. Heat up a non-stick pan and start cooking your pancakes, 2 at a time, for about 1 minute per side. Let the first 2 pancakes plain, then start adding pitaya powder and blue spirulina powder a little bit at a time after each 2 pancakes in order to create the ombre effect.

BLUE SPIRULINA PANCAKES
♡ 100 g all purpose flour
♡ 100 g oat flour
♡ 4 tbsp maple syrup
♡ 1 tbsp baking powder
♡ 1/4 tsp baking soda
♡ a pinch of salt
♡ 1 tbsp blue spirulina powder
♡ 300 ml milk of choice
♡ 1+1/2 tbsp apple cider vinegar
♡ 1 tbsp vanilla extract

Mix milk with apple cider vinegar and let the mixture sit for 5 minutes. In a large bowl whisk flours, baking soda, baking powder, spirulina powder and salt. Add in the milk-vinegar mixture, maple syrup and vanilla. Whisk to incorporate all the ingredients. Cook your pancakes on a nonstick pan for about 1 minute per side (low heat works best to keep the blue vibrant).

COCONUT PITAYA OATMEAL
♡ 50 g fine oat flakes
♡ 2 tbsp dessicated coconut
♡ 1 tbsp chia seeds
♡ 2 tsp vanilla extract
♡ 1 tbsp rawnice pink pitaya powder
♡ 450 ml plant-based milk of choice (you can also do half milk, half water or just water)
♡ 1 heaping tbsp agave syrup
.
In a small pot add the oats, coconut, chia seeds, agave and milk. Place it on the stove, over medium-high heat and let it cook until it comes to a boil. Whisk every now and then so that the oats don't stick to the bottom of the pot. As soon as your oatmeal starts to boil, turn the heat on low and keep cooking it until it thickens (it should take about 5 minutes or so; keep stirring occasionally). After your oatmeal has reached the desired consistency, turn off the heat and add in the vanilla extract and the pink pitaya powder. Whisk vigorously so that the pink powder gets to be fully incorporated. Serve your oats immediately with your favourite toppings.

.  Recipe (makes ~9 palm size pockets)⁣
🌱Filling ingredients:⁣
~ 1/2 - 3/4 lb Chinese chive - cleaned, drained & finely chopped⁣
~ 8oz firm tofu - mashed, pan fried & seasoned with salt & white pepper⁣
~ 1 bundle mung bean thread - softened in hot water & cut into fine shred⁣
~ 1 tablespoon toasted sesame oil⁣
~ 1 1/2 teaspoons salt (adjust to your preference)⁣
~ 1 teaspoon organic sugar⁣
~ a few shakes of white pepper⁣
⁣
🌱Dough ingredients:⁣
~ 2 3/4 cups all purpose flour⁣
~ 1/2 cup hot boiling water⁣
~ 1/4 cup cold water⁣
~ pinch of salt⁣
⁣
✅To make the dough, place flour & salt in a mixing bowl, then gradually pour in boiling water into the dry ingredients while stirring continuously using a spatula/chopsticks. ✅Continue adding cold water & knead into a soft dough, then let rest for 30 mins, covered.⁣
✅Meanwhile, place chopped chive, mung bean thread & mashed tofu in a bowl. Season accordingly with toasted sesame oil, salt, sugar & white pepper (adjust taste accordingly).⁣
✅To make the pockets, dust countertop with flour & divide dough into 9 pieces. Flatten each one with your palm & roll it into a circular disk by keeping the middle slightly thicker than the side. Fill each dough with fillings & pleat to seal by pinching the side.⁣
✅In a heated non-stick/cast iron pan with a drizzle of oil, toast pockets until golden brown on all side over low-med heat (covered). Serve warm with sambal oelek.⁣

I bought a couple and I thought a little bit of orange would look really nice on top of this vibrant pink nicecream 😍. To make the nicecream I blended 3 small frozen bananas, about 150 g frozen blackberries and 2 tbsp rawnice pink pitaya powder 👌. It was so good! INGREDIENTS
CHIA PUDDING
4 tbsp chia seeds
1/2 cups full-fat coconut milk
3/4 cup almond milk (or any plant-based milk)
 1/2 tsp pumpkin pie spice
1/4 tsp vanilla extract
1 tbsp maple syrup

PUMPKIN PIE MOUSSE LAYER
½ cup raw cashews, soaked in water overnight, then drained. 
1/2 cup+2 tbsp coconut milk (full-fat from a can)
5 tbsp pumpkin puree (not pumpkin pie filling)
2 tbsp maple syrup
2 tsp pumpkin pie spicevegan whip cream to top (optional)

INSTRUCTIONSMix the chia pudding ingredients together in a bowl until well combined, then place in the fridge to set while you prepare the pumpkin mousse. Add all the pumpkin mousse ingredients to a blender and blend until smooth. Scape down the sides of the blender as needed so all the little bits get blended up. Spoon the chia pudding evenly into little cups. Pour the pumpkin pie mousse mixture on top of the chia pudding.Place in the fridge and let set fo 2 hours.Top with vegan whip cream or any toppings you love!

CHOCOLATE PEPPERMINT TRUFFLES
For the truffles:
♡ 250 g white chocolate
♡ 150 ml full fat coconut milk
♡ 2 drops peppermint essential oil or peppermint extract to taste
.
For the chocolate glaze:
♡ 250 g white chocolate
½ tbsp blue spirulina powder
.
How to make:
Place 250 g chopped white chocolate in a large bowl.Add the coconut milk in a small pan, place it on low heat and bring it to a boil.When it starts to bubble, turn off the heat and pour the coconut milk over the chopped chocolate.Let it sit for 2 minutes, then whisk to help the chocolate melt and for the ingredients to combine.Add in the peppermint extract and whisk again.Place the truffle base in the fridge to set for at least 2 hours. After the 2 hours have passed and the chocolate mixture is firm enough to be scooped, make half a tablespoon sized balls (this recipe makes around 25 of them).Place the formed balls on a tray lined with baking paper and put them in the fridge to set again for at least half an hour.

For the coating melt 250 g vegan white chocolate in the microwave (800W, 40 second intervals) or on bain-marie. Add in the blue spirulina powder and whisk well.Coat every chocolate truffle with the blue chocolate glaze with the help of a fork, let the excess chocolate drip and put the truffles back on the tray.* Place the tray in the fridge until the coating sets (about 20 to 30 minutes).

*Optional: You can add winter themed sugar decorations on top of each truffle right after they were dipped into the glaze.

Turned out that Elena's moodiness and fussiness from last week were just because she was coming down with a cold 😔. VEGAN BANANA PANCAKES
♡ 250 g all purpose flour
♡ 10 g baking powder
♡ 2 large ripe bananas, mashed
♡ 320 ml plantbased milk of choice
♡ 1 tbsp vanilla extract
♡ 4 tbsp maple syrup
♡ a pinch of salt
♡ 1/4 cup chocolate chips
♡ 50 g pecans, chopped

In a large bowl mix flour, salt and baking powder. In a smaller one mix the mashed banana, milk, vanilla and maple syrup. Pour the wet mixture over the dry ingredients and whisk. Fold in the chocolate chips and pecans. Heat up a nonstick pan and start cooking your pancakes for about 1 minute per side.

🍚Let’s start with spicing up your rice!
◾️Day 1: This is the day you prep your meals for the whole week or for 3-4 days. Cook 1 cup plain rice (with chicken/vegetable broth instead of water!). Eat plain rice on day 1.
◾️Day 2: Grab one portion plain rice and mix with diced tomatoes reheat in a pan or in microwave.
◾️Day 3: Grab one portion plain rice and mix with chickpeas.
◾️Day 4: Grab the last portion and mix with veggies.

💡TIP: Reheating rice in microwave and placing damp paper towel on top will make the rice moist!

If it's true what they say and beauty really lies in the eyes of the beholder, not everyone will find this bowl as beautiful as I do, but what matters to me right now is that I LOVE IT! Maybe sometimes you are hesitant about sharing a photo that you love, because you are not sure how people will react to it, how many likes it will get and things like that. And maybe you let fear win and you decide to delete it or simply keep it in a forgotten folder on your phone, or you end by posting it, but it doesn't get the attention you've been hoping for and you get disappointed or worse, you delete it. But you know what? The way YOU feel about your work means the most! It's nice to be appreciated, of course it is, but remember that beauty is subjective so, don't let others bring you down. If you love your work, be proud of it, even if it gets less attention from others! Have a nice weekend!

🥣 To make this nicecream, I blended 4 large frozen bananas until creamy. Then I added 1 scoop of protein powder and I blended some more to incorporate it (makes the nicecream extra fluffy). I took out half of the nicecream and added it into a bowl and to what was left in the food processor, I added 2 tsp rawnice pink pitaya powder. I blended some more to incorporate it and then I transferred the pink nicecream in the bowl next to the white one.

1/2 cup frozen blueberries
1/2 cup desiccated coconut
1/4 cup gluten-free rolled oats
2 pitted medijool dates (12g)
1 tbsp cashew butter 
1 tbsp organic açai Berry powder suncorefoods .
Add all ingredients to a food processor and pulse until the mixture is well combined. 
Place mixture in the freeze for 10 minutes. Then scoop out 1-2 tbsp of the mixture and roll mixture into bite sized balls. Roll balls into more coconut if desired. 
Store bliss balls in an air tight container and store in the fridge for up to 5 days. Enjoy! .

.  5 roma tomatoes
2 red or orange bell peppers
3 large garlic cloves
1/2 cup fresh basil
1/2 tsp dried oregano
1 tbsp avocado oil
1/2 tsp dried rosemary
1 tsp salt
1.5 cups cooked rigatoni
Cut tomatoes in half. Remove stem and seeds from bell peppers. On a nonstick or foil-covered baking sheet, place the tomatoes, bell peppers and garlic. Cover with avocado oil, salt and crushed rosemary.
Roast for 20 minutes at 400F. Remove from oven and let cool for 5 minutes or until not hot to touch. Remove skins, then blend in a blender with oregano and fresh basil.
If sauce is too thin, cook in a sauce pan over medium heat for 5 minutes, stirring occasionally - this will allow some of the liquid to evaporate and thicken the sauce 🍝 Serve with your favorite al dente pasta!

VEGAN PURPLE OMBRE PANCAKES
♡ 190 g all purpose flour
♡ 1+1/2 tbsp baking powder
♡ 3 tbsp erithritol (or other sweetener)
♡ 360 ml plantbased milk of choice
♡ 1+1/2 tbsp apple cider vinegar
♡ rawnice pink pitaya powder

In a small bowl mix together milk and vinegar. Let the milk sit for 5 minutes, it will become some sort of a vegan buttermilk. In a large bowl mix flour, baking powder and sweetener. Add in the liquid mixture and mix well. Heat up a non stick pan and start cooking your pancakes. Let the first 2 plain, then start adding pink pitaya and blue spirulina powder to the batter (I added 1/2 tsp pink pitaya powder and 1/4 tsp blue spirulina powder after each 2 pancakes to achieve the ombre effect).

BASE
* 1/2 cup (125ml) gluten free rolled oats
* 1/2 cup (125ml) quinoa puffs
* 1/3 cup (80ml) almonds, chopped
* 1/3 cup (80ml) hazelnuts, chopped
* 1/4 cup (60ml) pumpkin seeds, chopped
* 1/4 cup (60ml) flax meal
* 1 tbsp chia seeds
* 1/3 cup (80ml) maple syrup
* 1 tbsp coconut oil, melted
* Pinch of sea salt
Preheat oven to 180°C (350°F). Line a 20x20cm (8x8 inch) baking pan with parchment paper. Combine all dry ingredients in a large bowl. In a small bowl, whisk maple syrup and coconut oil. Pour liquid over dry ingredients and stir until completely coated. Transfer the mixture in the prepared pan and press down firmly. Bake for 25 minutes or until golden brown. Let it cool slightly before spreading the chocolate.
TOPPING
* 180g dark chocolate
* 1 tbsp coconut oil
* 1 tbsp goji berries
* 1 tbsp pistachios, chopped
* 1 tbsp pumpkin seeds
* 1 tbsp cocoa nibs
* Pinch of sea salt
Melt chocolate and coconut oil in a double boiler. Spread evenly over the base. Sprinkle all toppings. Refrigerate for 1 hour before cutting into bars. Enjoy for breakfast or snack 😋

FLUFFY VEGAN PANCAKES
♡ 250 g all purpose flour
♡ pinch of salt
♡ 1 tbsp rawnice blue spirulina powder
♡ 1 tbsp rawnice pink pitaya powder (➡️ use code ANDREEASBREAKFAST15 to get 15% off your order on their website)
♡ 10 g baking powder
♡ 3 tbsp sweetener of choice (I used erithritol)
♡ 150 g coconut yogurt
♡ 200-250 ml milk of choice
♡ 1 tsp vanilla extract

In a large bowl mix flour, salt, blue spirulina, pink pitaya, baking powder and sweetener (if using liquid sweetener like maple, agave, honey etc., mix it with the wet ingredients first). In a small bowl mix yogurt, milk (start with 200 ml) and vanilla (add now the liquid sweetener too). Pour wet over dry and mix well. If the batter is too thick, add the remaining 50 ml of milk. Heat up a non stick pan and start cooking your pancakes about 1 minute per side.

- 2 big frozen black spot banana (for creamy texture and 'vanilla' taste)
- 100 g frozen sweet potato

👉Preheat oven to 175 degrees C (350 degrees F). Bake the sweet potato in the preheated oven until tender and cooked through, about 1 hour. Remove the peel from the cooked sweet potato and cool it, chop it and then freeze it overnight

Mix it all in a high speed blender until smooth, serve in a bowl and top it up with pb cups, banana, blackberries, peanut butter or whatever floats your boat.

.  Ingredients 
400g dairy free white chocolate, melted 
320g condensed coconut milk naturescharm 
1/2 cup dried cranberries 
Pinch of red beet powder for the colour, optional* .
Line a small pan with parchment paper that covers the sides of the pan. Melted chocolate in a double boiler, whisk in condensed coconut milk and beet powder stir until mixture is completely smooth.

Stir in dried cranberries, then quickly transfer the mixture to the lined pan and spread evenly.

Place pan in the freezer to set, about 2-4 hours. Cut the fudge into squares. Store fudge in an air tight container and store in the fridge for up to 1 week. .

(Dry)⁣
100g rolled oats⁣
100g raw almonds ⁣
7 Tbsp. coconut sugar ⁣
2 Tbsp. cocoa powder ⁣
1/4 tsp pink salt⁣
⁣
(Wet)⁣
5 Tbsp. melted coconut oil ⁣
⁣
Filling:⁣
200g raw cashew⁣ (soaked 4-6 hours and rinsed)⁣
100g fresh strawberry ⁣
180ml coconut cream ⁣
6 Tbsp. melted raw cacao butter ⁣
5-6 Tbsp. maple syrup ⁣
3 Tbsp. lemon juice ⁣
1/2 tsp lemon zest⁣
1/2 tsp vanilla paste⁣
1 tsp pitaya powder (for colour, optional)⁣
Pinch of good salt⁣
⁣
Decoration:⁣
10-15 small to medium sized strawberries, cut in half ⁣
20 blueberries ⁣
⁣
Directions: ⁣
1. Preheat oven to 170⁰C. Place every dry ingredient for the crust in a food processor. Process well until it reaches the consistency of flour. ⁣
2. Add melted coconut oil into the food processor and process until it becomes like wet sand⁣
3. Put a baking sheet on the mold and press the mixture into the bottom. Bake it for about 15-22 min or until baked through. After it has cooled down, put it in the freezer for 30 minutes to an hour. ⁣
4. Put every ingredient for the strawberry filling in a high-speed blender and blend well. Layer it over the crust and place strawberries and blueberries on the top. Freeze it until set. ⁣
5. Take out the cake from the mold and cut with a warm knife. ⁣ .
